Called the ā€œKiridashiā€in Japanese, this traditional knife is designed for woodworking and bamboo crafting. Its single-beveled blade yields a thinner edge, enabling delicate, precise cuts. Additionally, only the beveled side needs sharpening, resulting in reduced maintenance.

    The left handed kidishi id fine but the right handed kidoshi is missing the wood sheath top. Otherwise both items arrived in good timing.

The right-handed knife no longer includes the wooden sheath top because the craftspeople who used to make them have retired, so weā€™ve updated the design. That said, the quality and craftsmanship of the knives themselves remain exactly the same ā€” theyā€™re still made with the same high-grade steel and expert quality.
